You can never go wrong with this.
Sometimes when I get back from work, I am super tired. Then I think of my child, nanny and Fiancé and the first thing to pop into my head is “What are we eating for supper?”. My next immediate thought is if I do not make supper, I will be tempted to get fast food? I avoid fast food cause it’s greasy, cheap, really yummy but from what I read, it causes cancer and it’s the reason why I have my love handles.
So, what’s delicious, low-carb, easy to make, takes less than 20 minutes to cook and your toddler WILL enjoy it?
Simple, Frittata!
I first heard of a frittata on South Park, yes South Park. Stan’s dad went all cooking crazy and created a frittata. Since then, I have been obsessed with making them. Egg-based dished like quiches and omlettes are God’s gift to mankind. They are filling, delicious and and they don’t take hours to create.
Let me tell you about the one I made tonight. I added left over chicken, cherry tomatoes, onion, green pepper, salt and pepper, milk and egg into one giant bowl. Mixed it all up and added it to the greased pan where I sprinkled grated cheddar on and added it to the pre heated oven.
Voila! Supper is ready!
Every time I become lazy I create another variation of the meal. It works every time and I won’t lie, it’s really tasty!
