What do you get when you take a tired mother who just got back from holiday, add some leftovers from the fridge, add some thin chicken breasts and a screaming family?
A sandwich!!
No jokes. We bought this no egg mayo that was on special before our holiday. It was so delicious that I craved making a sandwich and toasting it and serving it with a great salad that I could take amazing photos of.
What actually happened is my child, husband and I had just came out of the car after a two hour drive and they look to me for food… As usual. I decided to create that delicious sandwich and salad I had in mind. So off I went, coated the chicken breasts, shallow fried them and after draining them, I too was tired and hungry to put in the effort to make the rest of the meal.
Grabbed some Rye/seeded bread coated it with mayo, threw on the chicken, thin slices of tomato, some rocket salt and pepper and topped it off with grated parmesean cheese and a tiny bit of balsamic vinegar to make this sandwich.
I tell you, I’m on a chef but this sandwich was so so delicious.
Masterpieces are made by accident. I now believe that! Writing this now, I still taste the sandwich and boy does it taste good.
I didn’t even care about presentation… We all ate off paper plates.
