#Recipe: Hash Egg cups

Eggs and potato are among my most favourite things. Of course that list is pretty long since I love food and wine so much. But this is how I like my breakfasts warn, eggy and with something extra to make my heart super happy. While this sounds all cryptic, let me just cut to the chase.

This breakfast cup is delicious, easy to make and doesn’t take a lot of man power. Side note, oven eggs usually have a weird thick layer on top when you bake them in the oven. However, in this recipe, I sprinkle a little grated cheese on top which melts in the oven and stops that gross layer from forming.

I started off this recipe by peeling and grating about 2 med-large potatoes. Yes this is a small amount because I made this for myself. Drain a bit of the potato water off by straining through a cloth. It’s a messy process, but it makes the potato extra crispy when you cook it. I grated a block of cheddar cheese too. You can see the little bits of yellow, yes that’s the cheese. Make sure you keep some aside. One part will be for sprinkling on top of the egg and the other part will be for melting on a side plate and eating… Just cause you can. After you’ve greased your muffin pan, line the pans with potato and cheese and put it in a pre-heated oven (180C) for 20 minutes. The last thing you want is to have raw potato because you will get sick, really sick.

After you remove the muffin pan from the oven, let it cool before adding the eggs into the potato hash. Here’s a tip: Break each egg into a cup/bowl before adding into the muffin pan. This helps you not break the yolk and not get any shells in your food.

Season with salt and pepper and lastly that little bit of grated cheese you kept aside earlier. Shove back in the over on the same heat for about another 15 minutes. Feel free to keep on checking it to ensure that the egg-white is fully cooked and you are left with the gooey yolk in the centre.

When you remove it from the oven, let it sit for a while, because it’s tired. Just kidding. It’s so fragile that you can try and remove it and it will break in your hands. After all that hard work, the last thing you need is to have non-photo-worthy food.

And there you have it. A quick and filling veggie breakfast that doesn’t leave you with mountains of dishes to wash. We’ve all heard the saying that “Breakfast is the most important meal of the day”, so why not spend that little longer time to ensure that we eat really well and most importantly, delicious meal.
