This is my first post for 2020. I often get do involved with work and family that I forget to share my taste bud adventures. I have felt like something is missing and I knew I had to put finger to keyboard and share more of my food and wine life.
It has been a while however, I’ve been looking for lower carb foods without compromising on taste. I’ve made a lot of variations before. I’ve used hake, smoked salmon off cuts, canned tuna, canned pilchards, angelfish and now I’m using canned salmon.

What you need is canned salmon, 2 large eggs, almond flour, spring/green onion, salt and pepper to taste and some oil for frying.

Combine all the ingredients except the oil in a bowl and put in the fridge for about 15 minutes to get all firm. Fry them about 3 minutes on each side until they’re golden brown. Drain on some paper towels and serve.
