I am part of the millions of people who are opting for lower carb lifestyles as part of their health needs. It has not been an easy journey because of the ease and availability of carb filled foods. The one thing I enjoy though is the creativity that comes with searching for alternatives which as packed with flavour.
Such a search brought me to last night’s dinner which left everyone licking their plates and asking for more, even the kids. A go to quick meal for us is usually potato mash. Slap in tons of butter or cream and there you have one of the simplest but delicious sides to a meal. Have it with chicken, fish, steak and it’s delicious everytime. But I saw avo in the fridge a d frozen cauliflower florets in the freezer and it gave me an idea that I’ve made before. The meal was garlic infused avo cauli mash. It has such a unique flavour that you can’t really put your finger on what of those 3 elements that makes the mash so delicious.
Cooking it is as simple as the flavours. Simoly: cook the cauliflower as desired, then add the garlic (I used 1 fresh clove) and half a large avocado. Use a hand stick blender so mash it altogether and add in some cream and salt as you please. That’s it.
The protein aspect, I had a little fun with. My mom loves chicken but hates the breast because it’s always so dry. I decided to challenge her experience and give her something that would render her speechless. I took thawed chicken breasts and sliced them open, seasoned them, added slices of cheddar cheese, closed them, season with basic chicken spice and wrapped them in fresh streaky bacon. Then I added them to the oven on 180 degrees for just over 30 minutes.
The secret is the bacon. While it flavours the chicken, it also keeps the moisture locked in. There’s no need to over them in foil or anything. Leave it on bake so they cook from all sides.
