It’s rare that I load so many recipes in a row, however being locked up in the house has gotten my creative juices flowing. Breakfasts have been my favourite be Use I wake up with a new burst of enthusiasm every sunrise, however, this supper meal was just so good, it deserved its own highlight.
Just so everyone knows, I am not vegan or vegetarian. Quite the opposite. I do endulge, quite often actually in meat less dishes that are out of this world. If I can keep it up for a month, I will not even miss meat… At all.
This meal came to me in a dream… No jokes. I literally dreamt about it and it turned out I had all the ingredients.
Just a note: if you don’t have cauli rice frozen, you can take the florets and grate them. It’s a tedious task but we’ll worth it. Here we go…
What you’ll need:
- 2 handfuls of caulirice
- 1/2 a red pepper, chopped
- 1 small onion, diced
- 1 punnet of mushrooms, sliced
- 1/2 teaspoon garlic paste
- 1 tablespoon of butter (optional)
- 1 handful of baby spinach
- Oil of your choice for frying/sautéing
Cooking it is super simple, it doesn’t even need to be step by step. Start off with the onion and red pepper. Fry it until tender. Then add the cauliflower and season as you like. I used salt and pepper and a dash of paprika. Then I added the mushroom, baby spinach and closed the pan to wilt the spinach a little. Lastly, I added butter to combine all the ingredients.
