“Breakfast is the most important meal of the day”
We’ve heard that saying a million times. This lockdown started off amazing, like a little holiday with your family in your house. As the repetition and monotony creeps in you have to come up with ways to keep the days interesting and having a great breakfast was my to do it. Here’s my collection of 8 amazing breakfasts that will please most palates. Unfortunately, they’re not vegan and vegetarian friendly. However remove the egg and bacon and you have a winner!

A simple toastie: Seasoned avo, sauteed mushroom, boiled eggs and a chilli salsa

Fully loaded: A bowl of mince (ground) beef, avo, chilli salsa and poached eggs

Sweet & healthy: oatmeal pancakes with candied cinnamon apple

Best of everything: Tiny potato pieces, avo, bacon, tomato, cheese and fried egg

The Sunday best: Farmers breaksfast of pork bangers, potato pieces, onion, and tons of cheese

Sweet treat: traditional flapjacks with raspberries, whipped cream and tons of syrup

Healthy & filling bowl: avo, chilli salsa, bacon bits, poached egg and quinoa

Explosion of flavours: Mushroom, baby spinach, avo, roasted butternut, avo mousse, fried egg and chilli flakes
While breakfast is one of the most rushed and skipped meals in the world, I feel like if we take that extra bit of time every morning to make a fully delicious meal for you and your family, your day changes. The lockdown has been difficult but made less difficult with a great breakfast.
