Meatless meals, making meat a memory

I just tried my hand at alliteration and I hope it makes sense. Just so you know what I meant, I am not vegan or vegetarian. I am a full on omnivore. I wasn’t dieting, just trying something new. By trying something new, I learned a lot about my body, cooking, flavours and I feel like I can add 10 more points to my cooking skill.

Let me give you a history of my life. Meat was always essential to every single dish. That’s how I grew up and I never had a problem skipping meat days a time but never for an entire week. Yes, I can see the non meat eaters rolling their eyes thinking BIG DEAL. For me, it was. When you’re used to something your entire life afraid to change the norm, trying something new and actually enjoying it feels like a really cool thing. So the title of the article basically shows that I didn’t miss meat as much as I thought I would. Let’s get into the meals before I start boring you:

Egg Fried rice

This meal is classically made with chicken, beef or pork strips and has an Asian background but this time I decided to skip the meat but I still have egg in it so it’s vegetarian.

Mushroom ragu tagliatelle

Here is a meal that people would expect to have a creamy base. I changed it up a little by making a vegetable and wine stock base and slowly cooking the mushroom in it. The pasta on the other hand was traditionally cooked, and then I coated it in cream and powdered parmesean. The combination of the flavours were absolutely amazing. There’s no other way to describe it!

Fried cauliflower steak

This was absolutely delicious. A pre cooked cauliflower piece was dipped in egg, coated with seasoning and flour then fried it and dried it on a kitchen towel. It was super super tasty. Served it with creamed spinach and a poached egg.

Smoked Paprkia Tofu salad

While getting my weekly kombucha dose, I came across the tofu that I was dying to make. Made it with a quinoa warm salad that had carrot, mushroom, broccoli, and red cabbage.

This has been an amazing journey of making flavours and not relying on meat to bring the flavour. This week has taught me that I can survive without meat, I will thrive without meat and I am more inclined now to start phasing out meat in my diet.
