As the Southern Hemisphere gears up for winter, the cooler temperatures invite a heartier fare and the wonderful world of wine offers countless opportunities to enhance these rich flavours. The boots, jerseys, and scarves are coming out and the shorts, bikinis and t-shirts are getting packed away. While the fashion may change, the way you eat deserves an upgrade too! Whether you’re braving the chill, or enjoying the seasonal rain, pairing the right wine with your winter meal can transform a simple dinner into a cozy and memorable dining experience. Here’s what I will be making this winter and I hope you join me on this journey too.
1. Braised Beef Short Ribs and Shiraz

Nothing says winter like slow-cooked, tender beef short ribs. This is one of my favourite meals! I love it and I can’t even deny it. The meat’s rich flavors and succulent texture pair splendidly with a robust Shiraz. Known for its spicy undertone and bold character, Shiraz stands up well to the intense flavours of the ribs. The hints of black pepper and dark fruits in the wine complement the deep, savoury essence of the beef, making it a comforting winter meal.
Ideal Pairing: Any Shiraz from South Africa that dates before 2022. They are known for their earthy notes and complexity.
2. Roasted Root Vegetables and Chardonnay

Don’t look away when you see a vegetarian dish and don’t judge it until you try it. Roasted root vegetables like carrots, beets, and sweet potatoes offer a sweet and earthy base that can be elevated with the right wine. A rich, oaky Chardonnay with its creamy texture balances the sweetness of the vegetables while adding a layer of complexity with its vanilla and toasty notes.
3. Seafood Stew and Sauvignon Blanc

We just had Easter, so fish should still be on your palette. For those who prefer seafood, a hearty seafood stew filled with fish, mussels, and shrimp is perfect for cold nights. Pair it with a Sauvignon Blanc to cut through the richness of the stew. The crispness of the wine, along with its citrus and herbal notes, refreshes the palate and complements the briny flavours of the seafood. Remember, the fresher, the better.
4. Wild Mushroom Risotto and Pinot Noir

This is one of the most underrated meals. Because it’s just basically rice and mushroom, it’s not that popular. Earthy and comforting, wild mushroom risotto should be a winter staple. Its creamy texture and umami flavors need a wine that’s equally earthy yet delicate. Pinot Noir, with its light body and notes of red fruits, earth, and herbs, enhances the risotto without overwhelming it.
5. Lamb Shank and Merlot

Who doesn’t love a Lamb shank? Slow-cooked until the meat falls off the bone, is a luxurious winter treat. Merlot, with its plummy notes and soft tannins, pairs beautifully with lamb. The wine’s fruit-forward profile and smooth finish balance the rich, gamey flavor of the lamb, creating a harmonious dining experience.
6. Pumpkin Soup and Viognier

A bowl of warm pumpkin soup is like a hug from the inside, and pairing it with a Viognier can turn it into a true culinary delight. The aromatic profile of Viognier, with its notes of stone fruit, spice, and floral hints, complements the creamy sweetness of pumpkin beautifully.
