What do you do when you have frozen de-boned fish, and have no intention of breading it and frying it?
You bake it!
I love frying my fish, chicken and even ham. I am a huge fan of egging it, breading it and frying it. On a very odd occasion, I had left the fish out to thaw and when it came to cooking it, I was too lazy to prepare the fish for frying.
So, I was left with the option of either letting my fish stay overnight in the fridge and risk salmonella, or I could find some way to cook this fish.
I took some lemon juice, butter, tomato, fish spice, foil fresh corriander and created this!
