My first shakshuka

I’ve wanted to make this meal for a very long time. I’ve watched videos, seen different variations and finally the situation presented itself where I could make it for my family.

With everyone waking up late, I hurried to the kitchen to prepare this.

I saw this variation online and because I have been looking for a delicious version, there was no time like the present to create this masterpiece.

I made this one with eggplant aka brinjal aka aubergine where it was diced really small and added into the tomato sauce.

Topped it off with an egg and into the oven it went.

And here’s the finished version

It tasted great with a side of avocado and with slices of jalapeño
